Low-carb bread

90gm ground almonds
90gm ground walnuts
60gm wholemeal flour
10gm dried yeast
5gm sugar
85gm butter
50ml water

2 very large eggs

The aim here is to make something bread like which does not raise blood sugar too much. You might call it Keto bread or Diabetic bread.

The amounts of ground nuts and flour can be changed as long as the total is 240gm. Clearly getting rid of flour reduces the carbohydrate content. Grind nuts fine enough and you end up with nut flour. Ground too much and they turn into nut butter.

The magic 85gm of butter is about one and a half egg weights.

Whisk up and melt the butter. Add yeast, sugar and water. Whisk.
Add the eggs. Whisk.
Add the "dry goods" (ground nuts, flour etc.) Mix (by hand).
Put the resulting batter in a loaf tin.
Cover with cling film, and then a tea towel.
Wait for the bread to rise, double in height, maybe a half hour.
Bake for 30 minutes at 200 °C (at the 20 minute mark cover the loaf top with baking paper).
